The Benefits of Hummus

I don't know about you, but I love hummus! Yesterday I tried making it for the first time and not until after I was finished and decided to look up about Chickpeas did I realize how good hummus is for you.

Chickpeas or garbanzo beans are, "one of the most nutritious of all legumes; they are high in calcium, phosphorus and potassium. They have exceptionally high iron and vitamin C content and contain B complex as well. Like all pulses, they are rich in essential fatty acids. However, as chickpeas are high in omega-6 fatty acids compared to omega-3 fatty acids they should not be consumed to excess." (from Nourishing Traditions by Sally Fallon)

I discovered that it takes quite a bit of whatever you are putting in for flavor to get the other flavors, but it is oh so good. :)
